Pumpkin Green Onion Pancake
Pumpkin is rich in carotene which helps protect us against cancer. Try this recipe today - these pumpkin pancakes are exceptionally easy to make and you can add in some garlic to make it even tastier!
Ingredients (for six pancakes)
- Pumpkin 80g
- Conpoy 10g (soaked and chopped)
- Glutinous rice flour 2 tablespoons
- Rice flour 2 tablespoons
- Water 4 tablespoons
- Shred green onion 2 tablespoons
- Salt 1/8 teaspoon
- Ground pepper – a little
- Sesame oil – a few drops
- Oil 1 teaspoon
Method
- Steam the pumpkin and mash it in a big bowl
- Mix the mashed pumpkin with glutinous rice flour and rice flour, then mix with water
- Pan fry the conpoy and add the mashed pumpkin with salt, sesame oil
- Heat up the frying pan, add oil, then pour in the pumpkin mixture, cook until golden or brown.
