Korean Rolled Omelet

Ingredients (for two people)

3 eggs
1 sushi seaweed sheet
1 slice of low-fat cheese
3 Tablespoon of peas, corns, and carrots

Seasoning

1 teaspoon of olive oil
Little bit of pepper

Method

  1. Defrost, then simmer and cool off the peas, corns, and carrots.
  2. Mix the eggs with peas, corns and carrots, season pepper to the mixture.
  3. Heat the pan, add olive oil and half of the egg mixture, and then add sushi seaweed sheet and the sliced cheese.
  4. Flip the omelet, add the other half of the egg mixture, and then flip the omelet again.
  5. Allow the omelet to cool, then cut it into pieces before serving.

Tips from dietician

  1. Frozen peas, corns and carrots are an excellent source of dietary fibers which can be used in many different recipes. It can be stored in the fridge for a long time.
  2. One egg equals to one portion of meat, which is rich in proteins and great for muscle building.
  3. Low-fat cheese can help calcium intake and prevent osteoporosis. Cheese also contains sodium (salt), no other seasoning is needed.
