Energy Balls

These energy balls are made with dry fruits and nuts and the soft texture and sweetness come from the soft dates.

I used Deglet Noor but Medjool or any soft variety is fine. https://harvesttotable.com/popular_date_varietieshere_are/

Almond & Cranberry

Ingredients:

  • 200 g raw almonds, unsalted, roasted
  • 100 g dates, pitted
  • 100g dried cranberries
  • ½ teaspoon vanilla
  • 30 g almonds sliced, roasted and crushed

Steps:

  1. Blend the almonds in a food processor until they turn to a meal.
  2. Add the dates, cranberries and vanilla until everything comes together. Add one teaspoon of water if necessary.
  3. Make balls with the dough and cover them with the roasted sliced almonds.
  4. Store them in an airtight container in the fridge

Cashew & Apricot

Ingredients:

  • 200 g raw cashew, unsalted, roasted
  • 100 g dates, pitted
  • 100 g sundried apricots
  • ½ teaspoon cinnamon
  • 30 g sesame seeds, roasted

Steps:

  1. Blend the cashew nuts in a food processor until they turn to a meal.
  2. Add the dates, sundried apricots and cinnamon until everything comes together. Add one teaspoon of water if necessary.
  3. Roll the dough with your hands to make balls and cover them with the roasted sesame seeds. Store them in an airtight container in the fridge.
