Energy Balls

These energy balls are made with dry fruits and nuts and the soft texture and sweetness come from the soft dates.

Almond & Cranberry
Ingredients:
- 200 g raw almonds, unsalted, roasted
- 100 g dates, pitted
- 100g dried cranberries
- ½ teaspoon vanilla
- 30 g almonds sliced, roasted and crushed
Steps:
- Blend the almonds in a food processor until they turn to a meal.
- Add the dates, cranberries and vanilla until everything comes together. Add one teaspoon of water if necessary.
- Make balls with the dough and cover them with the roasted sliced almonds.
- Store them in an airtight container in the fridge
Cashew & Apricot
Ingredients:
- 200 g raw cashew, unsalted, roasted
- 100 g dates, pitted
- 100 g sundried apricots
- ½ teaspoon cinnamon
- 30 g sesame seeds, roasted
Steps:
- Blend the cashew nuts in a food processor until they turn to a meal.
- Add the dates, sundried apricots and cinnamon until everything comes together. Add one teaspoon of water if necessary.
- Roll the dough with your hands to make balls and cover them with the roasted sesame seeds. Store them in an airtight container in the fridge.
